Banana Oatmeal Muffins

Ingredients

  • 3 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth.
  3. Add rolled oats, honey or maple syrup, melted coconut oil, eggs, and vanilla extract to the bananas, and mix well.
  4. In another bowl, combine baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, and stir until just combined. If using, fold in the chopped walnuts.
  6. Spoon the batter into the prepared muffin tin and fill each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool for a few minutes in the tin before transferring them to a wire rack to cool completely.

Notes

  • For extra sweetness, add chocolate chips.
  • These muffins freeze well for up to 3 months.
