- 3 ripe bananas
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the bananas until smooth.
- Add rolled oats, honey or maple syrup, melted coconut oil, eggs, and vanilla extract to the bananas, and mix well.
- In another bowl, combine baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, and stir until just combined. If using, fold in the chopped walnuts.
- Spoon the batter into the prepared muffin tin and fill each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
Notes
- For extra sweetness, add chocolate chips.
- These muffins freeze well for up to 3 months.
