Banana Oatmeal Muffins (No Flour, No Sugar)

Delicious and healthy banana oatmeal muffins that require no flour and no sugar.

Ingredients

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, applesauce, eggs, vanilla extract, baking powder, cinnamon, and salt. Mix until well combined.
  4. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These muffins can be stored in an airtight container for up to 3 days.
  • For added sweetness, consider mixing in some chopped nuts or dried fruits.
