- 2 cups cooked rice
- 4 slices turkey bacon, chopped
- 1 tablespoon soy sauce
- 1 tablespoon sriracha
- 1 green onion, sliced
- 1/2 cup peas and carrots
- 2 eggs, beaten
- In a large skillet, cook the turkey bacon over medium heat until crispy.
- Add the peas and carrots and stir for a few minutes.
- Push the mixture to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until cooked.
