  • 200 grams Biscoff cookies
  • 250 grams all-purpose flour
  • 200 grams granulated sugar
  • 100 grams unsalted butter, softened
  • 300 ml buttermilk
  • 3 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 100 grams Biscoff spread

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.
  3. In a bowl, mix the flour, baking powder, and salt.
  4. In another bowl, beat the butter and sugar until creamy.
  5. Add the eggs one at a time, mixing well after each.
  6. Mix in the dry ingredients alternating with the buttermilk.
  7. Stir in crushed Biscoff cookies and half of the Biscoff spread.
  8. Divide the batter between the prepared pans.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let the cakes cool before frosting with the remaining Biscoff spread.
