- 1 can (15 oz) pumpkin puree
- 3/4 cup brown sugar
- 1/2 cup bourbon
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup sugar (for brûlée topping)
- Preheat the oven to 425°F (220°C).
- Roll out the pie crust and fit it into a pie dish.
- In a large bowl, mix together the pumpkin puree, brown sugar, bourbon, vanilla extract, spices, and salt.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the heavy cream until smooth.
- Pour the filling into the prepared crust.
- Bake for 15 minutes, then reduce the oven temperature to 350°F (175°C) and bake for an additional 45 minutes, or until the filling is set.
- Let cool, then sprinkle sugar on top and use a kitchen torch to brûlée the sugar until caramelized.
Notes

- For a non-alcoholic version, you can omit the bourbon.
