Brownie Muffins

A delicious take on classic brownies, these muffin-style treats are perfect for any occasion.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, then add the melted butter and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed. Fold in the chocolate chips.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra richness, add a swirl of cream cheese to the batter.
  • These muffins are best enjoyed fresh but can be stored in an airtight container.
