Budget veggie bolognese

A delicious and affordable meatless bolognese that puts a healthy spin on a classic dish.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (15 ounces) lentils, drained and rinsed
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Spaghetti or your pasta of choice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic; sauté until the onion becomes translucent.
  3. Stir in the carrot, zucchini, and bell pepper; cook for about 5-7 minutes.
  4. Add the diced tomatoes, lentils, oregano, and basil. Season with salt and pepper. Simmer for 15-20 minutes.
  5. Meanwhile, cook your pasta according to package instructions.
  6. Serve the sauce over the cooked pasta.

Notes

  • For extra flavor, consider adding a splash of balsamic vinegar.
  • Vegetable broth can be used instead of water when cooking pasta for added taste.
