Chicken Burrito Casserole

A delicious and easy recipe for chicken burrito casserole that makes mealtime a breeze.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 2 cups salsa
  • 1 cup shredded cheese
  • 1 package taco seasoning
  • 6 flour tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, taco seasoning, and half of the cheese.
  3. In a baking dish, layer three tortillas on the bottom.
  4. Spread half of the chicken mixture over the tortillas.
  5. Repeat with another layer of tortillas and the remaining chicken mixture.
  6. Top with the last three tortillas and sprinkle with the remaining cheese.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.

Notes

  • Feel free to customize with your favorite ingredients.
  • Can be made ahead of time and stored in the fridge before baking.
