Chicken Quesadillas

Delicious and easy chicken quesadillas recipe perfect for a family weeknight meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add onions and bell peppers, sauté until soft.
  3. Stir in the shredded chicken and taco seasoning, cooking until heated through.
  4. Place a tortilla in the skillet, add a portion of the chicken mixture and cheese, top with another tortilla.
  5. Cook until the bottom is golden brown, then flip and cook the other side.
  6. Remove from skillet, cut into wedges, and serve with your favorite dipping sauce.

Notes

  • For extra flavor, you can add jalapenos or spices to the chicken mixture.
  • Serve with sour cream, salsa, or guacamole for dipping.
