  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup mushrooms, sliced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pound the chicken breasts to an even thickness.
  3. Dredge each breast in flour, dip in beaten eggs, then coat in breadcrumbs.
  4. Heat olive oil and butter in a pan over medium heat.
  5. Fry the schnitzels until golden brown on both sides, then transfer to the oven to finish cooking.
  6. In the same pan, add sliced mushrooms and sauté until tender.
  7. Pour in heavy cream and simmer until the sauce thickens.
