Chocolate Banana Oatmeal Muffins

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas with a fork.
  3. Add rolled oats, cocoa powder, honey or maple syrup, almond milk, vanilla extract, baking powder, and salt to the bowl and mix well.
  4. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the pan for a few minutes, then transfer to a wire rack.

Notes

  • For an extra chocolatey flavor, you can add more chocolate chips on top before baking.
