- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas with a fork.
- Add rolled oats, cocoa powder, honey or maple syrup, almond milk, vanilla extract, baking powder, and salt to the bowl and mix well.
- Fold in the chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes, then transfer to a wire rack.
