  • 1 cup fresh cranberries, chopped
  • 1 cup sugar
  • 1/2 cup orange juice
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin pan or line with muffin liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, eggs, orange juice, vanilla extract, and orange zest.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped cranberries.
  5. Fill the muffin cups about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool slightly before removing them from the pan.

Notes

  • For a sweeter muffin, you can add a little more sugar or a sprinkle of sugar on top before baking.
  • These muffins are best served fresh but can be stored for a few days.
