  • 1/4 cup brown sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, whisk together the milk, vegetable oil, and vanilla extract. Combine the wet and dry ingredients until just combined.
  4. Spoon half the batter into the muffin cups.
  5. In a small bowl, mix the brown sugar and ground cinnamon. Sprinkle this mixture over the batter in the muffin cups.
  6. Top with the remaining batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool slightly before serving.
