Copycat Costco Almond Poppyseed Muffins

  • 1/2 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 tablespoons poppy seeds
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the eggs, buttermilk, almond extract, and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined, then fold in the poppy seeds.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
