  • 2 cups cooked chicken, shredded
  • 1 cup leeks, chopped
  • 1 cup carrots, diced
  • 1 cup peas
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pie crust

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Stir in leeks and carrots, cooking until softened.
  3. Add flour, stirring constantly for 1-2 minutes. Gradually mix in chicken broth and bring to a simmer.
  4. Stir in shredded chicken, peas, heavy cream, thyme, salt, and pepper. Remove from heat.
  5. Pour the mixture into a pie dish and cover with the pie crust. Cut slits in the top crust for steam to escape.
  6. Bake in preheated oven for 30-35 minutes, or until the crust is golden brown.
  7. Let cool slightly before serving.
