Crockpot Lasagna Soup

A delicious and comforting Crockpot Lasagna Soup made with turkey bacon and chicken ham, perfect for easy family dinners.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large skillet, cook the turkey and turkey bacon over medium heat until browned.
  2. Add onion and garlic, cook until translucent.
  3. Transfer to a crockpot and add crushed tomatoes, chicken broth, noodles, Italian seasoning, salt, and pepper.
  4. Stir well and cook on low for 6-8 hours.
  5. During the last 30 minutes, add ricotta, mozzarella, and Parmesan. Stir to combine.
  6. Serve warm.

Notes

  • For a vegetarian version, omit the turkey and bacon and add more vegetables.
  • Feel free to use different types of cheese according to your preference.
