Fresh Cranberry Muffins

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, buttermilk, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the fresh cranberries.
  5. Divide the batter among the muffin cups and bake for 20-25 minutes or until golden brown.
  6. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add an extra ½ cup of sugar.
