3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup fruit preserves or jam of choice
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs and vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the creamed mixture.
Roll the dough into balls and place them on a baking sheet.
Make an indentation in each ball with your thumb and fill with fruit preserves.
Bake for 12-15 minutes or until lightly browned.
Allow to cool before serving.
