Glazed Gingerbread Muffins

  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the butter and brown sugar until creamy.
  4. Add the molasses and eggs, then mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk and vanilla extract.
  6. Fill each muffin cup about 2/3 full and bake for 18-20 minutes.
  7. Let cool before glazing.
  8. For the glaze, mix powdered sugar and milk until smooth and drizzle over muffins.

Notes

  • For extra flavor, add chopped crystallized ginger.
  • Store muffins in an airtight container for up to 3 days.
