Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened.
  3. Stir in garlic and cook for an additional minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken, thyme, salt, and pepper; simmer for 15 minutes.
  6. Stir in egg noodles and cook until tender.
  7. Remove from heat and stir in fresh parsley before serving.

Notes

  • For extra flavor, add bay leaves during simmering and remove before serving.
