Healthy Almond Joys Recipe

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 16 whole almonds
  • 1 cup dark chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a bowl, mix shredded coconut, almond butter, honey or maple syrup, vanilla extract, and salt until combined.
  2. Line a baking sheet with parchment paper. Take about a tablespoon of the mixture and shape it into a small rectangle. Place an almond on top. Repeat with remaining mixture.
  3. Freeze the coconut rectangles for about 30 minutes.
  4. Meanwhile, melt chocolate chips and coconut oil together in a microwave or double boiler until smooth.
  5. Dip each frozen coconut rectangle in the melted chocolate, allowing excess to drip off.
  6. Return to the baking sheet and freeze again until chocolate is set.

Notes

  • For a vegan version, use maple syrup instead of honey.
  • Store in an airtight container in the refrigerator.
