- 1 cup unsweetened shredded coconut
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 16 whole almonds
- 1 cup dark chocolate chips
- 2 tablespoons coconut oil
- In a bowl, mix shredded coconut, almond butter, honey or maple syrup, vanilla extract, and salt until combined.
- Line a baking sheet with parchment paper. Take about a tablespoon of the mixture and shape it into a small rectangle. Place an almond on top. Repeat with remaining mixture.
- Freeze the coconut rectangles for about 30 minutes.
- Meanwhile, melt chocolate chips and coconut oil together in a microwave or double boiler until smooth.
- Dip each frozen coconut rectangle in the melted chocolate, allowing excess to drip off.
- Return to the baking sheet and freeze again until chocolate is set.
Notes
- For a vegan version, use maple syrup instead of honey.
- Store in an airtight container in the refrigerator.
