2 ripe bananas
1 cup rolled oats
1/2 cup protein powder
1/4 cup honey or maple syrup
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup Greek yogurt
1/4 cup chopped walnuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
In a mixing bowl, mash the ripe bananas until smooth.
Add the oats, protein powder, honey or maple syrup, baking soda, vanilla extract, cinnamon, salt, and Greek yogurt. Mix until well combined.
If using, fold in the chopped walnuts.
Divide the batter evenly into the prepared muffin tin.
Bake for 18-20 minutes or until a toothpick comes out clean.
Allow muffins to cool before serving.
