Ingredients

  • 1 cup Greek yogurt
  • 1 cup pumpkin puree
  • 1/2 cup honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the Greek yogurt, pumpkin puree, honey, eggs, and vanilla extract until smooth.
  3. In another bowl, mix the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir just until combined. If desired, fold in the chocolate chips.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • Store leftovers in an airtight container for up to 5 days.
  • For added sweetness, you can substitute maple syrup for honey.
