- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup pumpkin puree
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix together the pumpkin puree, eggs, oil, and vanilla until smooth.
- Combine the wet and dry ingredients until just mixed.
- In a separate bowl, mix the cream cheese, powdered sugar, and vanilla until smooth.
- Fill each muffin cup with batter, then add a dollop of cream cheese mixture on top, swirling it slightly.
- Bake for approximately 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For a sweeter muffin, add chocolate chips to the batter.
