Homemade Starbucks Pumpkin Cream Cheese Muffins

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together the pumpkin puree, eggs, oil, and vanilla until smooth.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a separate bowl, mix the cream cheese, powdered sugar, and vanilla until smooth.
  6. Fill each muffin cup with batter, then add a dollop of cream cheese mixture on top, swirling it slightly.
  7. Bake for approximately 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For a sweeter muffin, add chocolate chips to the batter.
  • These muffins can also be made with whole wheat flour for a healthier option.
