  • 1 pound elbow macaroni
  • 4 ounces turkey bacon
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups whole milk
  • 2 cups grated sharp cheddar cheese
  • 1 cup grated Gruyère cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook the macaroni according to package directions.
  2. In a large skillet, cook the turkey bacon until crispy, then remove and chop.
  3. In the same skillet, melt the butter and whisk in the flour until golden.
  4. Slowly add the milk, whisking constantly until thickened.
  5. Stir in the cheddar, Gruyère, mustard, salt, and pepper until smooth.
  6. Combine the pasta and cheese sauce in a baking dish, adding the chopped turkey bacon.
  7. Bake at 350°F for 30 minutes until bubbly and golden.
