Instructions

  1. In a large pot, heat olive oil over medium heat and add chopped onion, carrots, and celery. Sauté until the vegetables are tender.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add chicken thighs and chicken broth, bringing to a boil.
  4. Reduce heat and add thyme and rosemary, simmering until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in heavy cream and adjust seasoning. Cook for a few minutes until heated through.
