  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and cool.
  2. In a pan, cook the turkey bacon until crispy. Chop and set aside.
  3. In a large bowl, combine cooled pasta, turkey bacon, tomatoes, cucumber, red onion, feta cheese, and olives.
