Mexican Chicken Casserole

A comforting and simple Mexican Chicken Casserole that the whole family will enjoy.

  • 2 cups cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 2 cups shredded cheese
  • 8 flour tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, and chili powder.
  3. In a greased baking dish, layer 4 tortillas, half the chicken mixture, and half the cheese.
  4. Repeat the layers, finishing with cheese on top.
  5. Bake for 25-30 minutes until bubbly and golden.
  6. Let it cool for a few minutes before serving.
