Monterey Chicken Spaghetti

Monterey Chicken Spaghetti is a comforting dish that combines the flavors of chicken, spaghetti, and turkey bacon.

  • 8 ounces spaghetti
  • 2 boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 cup cheddar cheese, shredded
  • 1/2 cup Monterey Jack cheese, shredded
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a skillet, cook turkey bacon until crispy; remove and crumble.
  3. In the same skillet, sauté onion, bell pepper, and garlic until soft.
  4. Add chicken breasts and season with paprika, salt, and pepper; cook until no longer pink.
  5. Stir in chicken broth and bring to a simmer.
  6. Combine with spaghetti and top with cheddar and Monterey Jack cheese.
  7. Sprinkle crumbled turkey bacon on top and bake at 350°F for 20 minutes.

Notes

  • For a spicier version, add red pepper flakes.
