- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices turkey bacon, diced
- 3 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 4 cups beef broth
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- In the same pot, add olive oil and brown the beef cubes in batches. Remove beef and set aside.
- Add onion, carrots, and potatoes to the pot and sauté until slightly softened.
- Return the beef and bacon to the pot, then add garlic, thyme, bay leaves, salt, and pepper.
- Pour in the beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Remove bay leaves before serving.
