Old Fashioned Beef Stew Recipe

A classic old fashioned beef stew recipe made with tender beef, savory turkey bacon, and fresh herbs that brings comfort to your dinner table.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices turkey bacon, diced
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, add olive oil and brown the beef cubes in batches. Remove beef and set aside.
  3. Add onion, carrots, and potatoes to the pot and sauté until slightly softened.
  4. Return the beef and bacon to the pot, then add garlic, thyme, bay leaves, salt, and pepper.
  5. Pour in the beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  6. Remove bay leaves before serving.

Notes

  • For extra flavor, let the stew chill overnight and reheating the next day enhances the taste.
