Orange Muffins

A delightful recipe for orange muffins that are light and bursting with citrus flavor.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy. Add the eggs, buttermilk, orange zest, and vanilla; mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill the muffin cups 2/3 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

  • For extra flavor, you can add chocolate chips or nuts to the batter.
  • Make sure your butter is softened for easy mixing.
