- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, mix flour, baking powder, baking soda, spices, and salt.
- In another bowl, combine sugar, pumpkin puree, oil, and eggs until smooth.
- Gradually incorporate dry ingredients into the wet ingredients.
- Fill liners about 2/3 full with batter.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool completely before frosting.
- Prepare cream cheese frosting by mixing softened cream cheese, butter, and powdered sugar until fluffy.
- Frost cooled cupcakes and enjoy!
Notes
- For extra flavor, add a teaspoon of vanilla extract to the frosting.
