Pumpkin Cupcakes with Cream Cheese Frosting

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, mix flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, combine sugar, pumpkin puree, oil, and eggs until smooth.
  4. Gradually incorporate dry ingredients into the wet ingredients.
  5. Fill liners about 2/3 full with batter.
  6. Bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow to cool completely before frosting.
  8. Prepare cream cheese frosting by mixing softened cream cheese, butter, and powdered sugar until fluffy.
  9. Frost cooled cupcakes and enjoy!

Notes

  • For extra flavor, add a teaspoon of vanilla extract to the frosting.
  • Make sure the cupcakes are completely cool before applying frosting to prevent it from melting.
