1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup pumpkin puree
1 cup sweetened condensed milk
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
1 cup chocolate chips
1/2 cup chopped nuts (pecans or walnuts)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed.
Press the mixture evenly into the bottom of the baking dish.
In another bowl, whisk together the pumpkin puree, sweetened condensed milk, pumpkin pie spice, and vanilla extract until smooth.
Pour the pumpkin mixture over the crust in the baking dish.
Sprinkle chocolate chips and chopped nuts on top of the pumpkin layer.
Bake in the preheated oven for 25-30 minutes or until the edges are lightly browned.
Remove from the oven and let cool before cutting into bars.
Notes
For a gluten-free option, use gluten-free graham crackers.
