  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine pumpkin puree, sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about halfway.
  7. In a small bowl, mix the softened cream cheese until smooth and place a dollop on top of each muffin.
  8. Swirl the cream cheese into the batter using a toothpick or knife.
  9. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  10. Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
