Shredded Chicken Enchiladas

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, 1/2 cup of enchilada sauce, onions, cumin, and garlic powder.
  3. Warm the tortillas to make them pliable.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam side down in a baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
