Spiced roasted cauliflower with lentils and tahini yoghurt is a delicious and nutritious dish that combines the earthy flavors of roasted cauliflower, protein-rich lentils, and creamy tahini yogurt.

  • 1 head cauliflower
  • 1 cup lentils
  • 2 tablespoons tahini
  • 1 cup yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and place on a baking sheet.
  3. Drizzle with olive oil, cumin, coriander, paprika, salt, and pepper.
  4. Toss well to coat the cauliflower evenly.
  5. Roast in the preheated oven for 25-30 minutes until golden brown.
  6. While the cauliflower is roasting, cook the lentils according to package instructions.
  7. In a bowl, mix tahini and yogurt until smooth.
  8. Serve the roasted cauliflower over a bed of lentils and drizzle with tahini yogurt.
