  • 4 large eggs
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the crushed graham crackers and melted butter to form the crust.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. Pour the cheesecake batter over the crust in the springform pan.
  8. Bake for 50-60 minutes until the center is set.
  9. Let cool to room temperature, then refrigerate for at least 4 hours.
  10. Whip the heavy cream and powdered sugar until soft peaks form.
  11. Top the chilled cheesecake with sliced strawberries and whipped cream before serving.
