Twice Baked Breakfast Potatoes

A delicious breakfast option featuring twice baked potatoes filled with turkey bacon and cheese.

Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce potatoes, then bake for about 45-60 minutes until tender.
  3. Cook turkey bacon until crispy, then chop into small pieces.
  4. Once potatoes are cool, cut them in half and scoop out the insides into a bowl.
  5. Add sour cream, garlic powder, chopped turkey bacon, and half the cheese to the potato insides, mix well.
  6. Refill potato skins with the mixture, top with remaining cheese.
  7. Bake for another 15-20 minutes until cheese is melted and bubbly.
  8. Garnish with green onions before serving.

Notes

  • This dish can be prepped a day in advance and baked before serving.
  • Feel free to add other toppings like jalapeños or additional cheese.
