Vegan noodle soup

A warm and comforting vegan noodle soup that is full of flavor and perfect for chilly days.

Ingredients

  • 1 cup rice noodles
  • 1 tablespoon soy sauce
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon sesame oil
  • 2 green onions sliced

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the rice noodles and soy sauce, cooking until noodles are tender.
  5. Stir in the mixed vegetables and cook for an additional 3-5 minutes.
  6. Remove from heat and garnish with sliced green onions before serving.
